Aged Cheese
At first, we thought, “Surely cheese needs to be refrigerated, it’s made from milk!” However, aged cheeses like Gouda, Gruyere, and Cheddar are considered “cured” cheeses. It takes approximately 6 months to cure them. So these cheeses can be put in cool places … because you don’t want any cheese melted before it has ever seen an oven.

Many olive exporters claim that the olives should not go bad at the counter if people keep the olives they buy in the brine that the olives were made in. What matters is that the olives are not in direct sunlight and that their container is sealed.
